How to Cook and Eat in Chinese por Buwei Yang Chao
I taught myself to cook using this cookbook. I think everyone should own a copy, not only for the simplicity and tastiness of the recipes, but for the sly and witty explanations and anecdotes. (Chao's husband was a linguist.) I believe Chao coined the term "stir-fry".
