This little book (106 pgs) has a variety of interesting looking bread recipes, including such things as potato & chestnut breads.
They make the assumption you know nothing, showing you how to mix, knead and shape bread (loaves, twists, sheaves), various additives that can be used (such as yogurt) and the tools you will need.
