About the Author

Kay K. Moss founded the Eighteenth-Century Backcountry Lifeways Studies Program at the Schiele Museum in Gastonia, North Carolina, and teaches open-hearth cookery at John C. Campbell Folk School. Nicely laid out; does a nice job of relating the receipts to the people of the region. Most of the receipts are from Hannah Glasse or Mary Randolph and so can be found in reproductions of their original source. But the few that are from manuscripts from the region are terrific primary resources.
