I have just heard a reading on the BBC's With Great Pleasure programme of an excerpt from Mapp and Lucia in which Mapp pinches Lucia's famous recipe for 'Lobster a la Riseholme' just before being washed out to sea. The reader pronounced 'Riseholme' as 'rizzum'. While that fits the English conceit of arcane pronunciation of names - Cholmondeley, Featherstonehaugh and the like - does anyone know if there is any authorial authority to that?

...and does anbody have the recipe?

Thanks for posting -- I've always wondered about this recipe!

For US readers/cooks what is 'passata' oil? What would be a good substitute?

That should actually read:
2-3 tbsp passata
Oil and butter for frying

"Passata" is tomato purée.

Should have thanked you before, lilithcat, so 'Thank you!' The recipe sounds nice, although I can't help feeling that Lucia would have found something cleverer than tomato and paprika for her pink sauce. Has to be Italian and obtainable in the Cotswolds - I'll have to work on that ;-)

Riseholme is a village in Lincolnshire where EFB lived when his dad was bishop of Lincoln. It is the original of the village in QL and LIL. The local pronunciation is "rise-home". There are no grounds for any other pronunciation.

Thanks for that, Patrick - nice to have an authoritative answer, even after 3 years ;-)

I could see Lucia preferring a 'faux-posh' pronunciation, though.
