Cooking with honey

We are always scouting for cookbooks that focus on honey, so post your recommendations here or if you stumble across a tasty honey recipe. And mead! don't forget the mead.

I just recently acquired Kangaroo Island Honey Cookbook which combines some nice recipes with a little bit of the history of beekeeping on the island and is decorated with pictures of a lot of the local honey labels. Unfortunately all the illustrations are in black & white but they're still interesting.
